| Message: | I ain't no lady, Brit, but here's a good one: 1 stick margarine -- (4 ounces) 2 cups sweet potatoes, mashed 2 cups sugar 1 small can evaporated milk 2 pie crusts, unbaked 1 teaspoon vanilla 3 eggs 1 1/2 teaspoons cinnamon dash of nutmeg Boil potatoes until soft, peel, and mash. Mix potatoes, sugar and margarine well. Add other ingredients and mix well. Pour into crusts. Bake 1 hour at 350 degrees. Makes 2 pies. Also, as a rule of thumb, if you have a favorite pumpkin pie recipe, use it and just substitute sweet potatoes for the pumpkin. Enjoy! |
